Strawberries and Cream Oatmeal THM-E
This recipe calls for egg whites, which make the oatmeal even more filling, so it will hold you over until lunch. The egg whites also make this so creamy and fluffy! I almost always use fresh egg whites in my recipes because we have an abundance of eggs with having chickens. However, in this recipe I highly recommend using pasteurized, carton egg whites. I promise you will not taste the egg whites, and if you are concerned about adding raw eggs at the end of cooking feel free to omit them, it will not change the taste, it will just make the oatmeal creamier. They add a nice little punch of protein to your breakfast, as well.
For this recipe you will need:
1 cup of strawberries ( I have used both frozen and fresh strawberries, and it is good either way)
1 and 1/4 cups water
1.5 Tbsp raw, pasteurized egg whites
1/2 cup old fashioned oats
1.5 - 2 Tbsp. Gentle Sweet (or equivalent sweetener). I like things sweet, and this might seem like a lot for a bowl of oatmeal, but if you want it to taste like the store-bought packets you will need this much.
Pinch of mineral salt
1 tsp. Half and Half (You can also use unsweetened cashew or almond milk, and use more to your liking)
Add the strawberries, water, and oats to a medium sized saucepan. Bring to a boil, and cook for 5 minutes once boiling. While this is cooking mash the strawberries (I use a potato masher) every so often, until they are completely mashed up.
Remove from heat and immediately whisk in egg whites. Pour egg whites in slowly, and continuously whisk. I whisk for about 30 seconds after I pour in the egg whites. This is important to do correctly or you will end up with scrambled eggs in your oatmeal, and you don't want that!
Mix in the Gentle Sweet and salt. Transfer to bowl and top with Half and Half or your choice of nut milk, and enjoy! This makes a nice, big bowl of oatmeal to fill you up!
