Apple Fritters THM-E * Low Fat * Dairy Free *Gluten Free *Egg Free *Sugar Free


Apple Fritters! Big, fried, hometown bakery, fresh, apple fritters used to be my after church Sunday indulgence (before THM). I would pay for it the rest of the day after eating that big fried, sugary treat. I would often get an upset stomach, headache, and just feel awful in general for the rest of the day. I knew this was one treat I would eventually have to "THMify" if I was to stay on plan for life. Now I can have a healthy treat that doesn't make me feel awful, but actually gives my body the energy it needs. And yes, they really are dairy free, gluten free (if using gluten free oat flour), egg free, and sugar free! This is one breakfast I look forward to having when I go to bed at night. 😆

For this recipe you will need:

An air fryer or convection oven

1/4 cup THM Gentle Sweet, or another THM approved sweetener
1 and 1/2 cups (make the 1/2 cup heaping) oat flour (ground up rolled oats)
1/2 tsp. mineral salt
2 tsp. baking powder
2 tsp. cinnamon
1/2 cup unsweetened applesauce
1/2 cup unsweetened almond or cashew milk
2 large apples, peeled and diced
coconut oil cooking spray

For the glaze:
THM Gentle Sweet (or another on plan powdered sweetener)
unsweetened almond or cashew milk
vanilla extract

Stir all of the dry ingredients together. Add applesauce and milk to the dry ingredients and mix until just combined. Fold in the diced apples. The batter should be thick, not runny at all. It should not spread out when dropped. If it does spread out when dropped, add a bit more oat flour until it is a thicker consistency that doesn't spread out.

Line your air fryer or baking sheet with parchment paper, and spray with nonstick coconut oil spray. Drop 1/4 of the batter into a fritter the size and shape of how you want it to turn out. Spray the top of the fritter with a spritz of the coconut oil spray. Repeat with the remaining batter. I do this to get 4 large bakery sized fritters. Air fry (or use convection oven) at 375 degrees for 10 minutes. Flip, then air fry another 2-3 more minutes. I've found this works best in my air fryer. My air fryer is small, so I have to cook them in batches.

Glaze:
If serving immediately, mix up a glaze of unsweetened almond milk, Gentle Sweet, and a few dashes of vanilla until you get the consistency you prefer. Start with a very small amount of nut milk (2 Tbsp. or so) as it's easier to add more nut milk as you go, than to use too much Gentle Sweet. Gentle Sweet is precious to me! 🤣 Drizzle the glaze on the fritters, and enjoy!

Directions for not serving immediately (This is what I do. I save them to have one each morning for breakfast):
Once cooled, store fritters in the refrigerator. When ready to serve one, heat up in the air fryer for around 3 to 4 minutes. While it is heating up, make a very small amount of the glaze, and drizzle on as soon as it comes out of the air fryer. Yum! I hope you love it as much as I do!
