Blueberries and Cream Oatmeal THM-E


 Looking for a new way to spice up your morning oatmeal routine? I really like Strawberries and Cream oatmeal, but this version is my favorite. It's like having dessert for breakfast! It's so creamy and filling! This recipe also uses raw, pasteurized egg whites. You can read more about that here.

I like to use frozen, wild blueberries in this recipe. Did you know wild blueberries have 33% more antioxidants than ordinary blueberries? They are also frozen at their peak, giving them a better taste over regular blueberries, which are frozen before they are ripe. I really do notice a big difference in taste between frozen wild blueberries and regular frozen blueberries. They are very easy to find in any grocery store, as well.

For this recipe you will need:

1/2 cup frozen, wild blueberries 

1 and 1/4 cups water

1.5 Tbsp. pasteurized egg whites

1/2 cup old fashioned oats

2 Tbsp. Gentle Sweet (or equivalent sweetener)

1/4 tsp. vanilla extract

pinch of salt

1 tsp. Half and Half (or nut milk, and feel free to add more)

Add the blueberries, water, and oats to a medium sized saucepan. Bring to a boil, and cook for 5 minutes once boiling. While this is cooking mash the blueberries every so often, until they are completely mashed up.

Remove from heat and immediately whisk in egg whites. Pour egg whites in slowly, and continuously whisk. I whisk for about 30 seconds after I pour in the egg whites. This is important to do correctly or you will end up with scrambled eggs in your oatmeal, and you don't want that! 

Mix in the Gentle Sweet, vanilla, and salt. Transfer to a bowl and top with Half and Half or your choice of nut milk, and enjoy! This makes a nice, big bowl of oatmeal to fill you up!
