Protein Packed Cookie Dough ~THM-E ~ Low-Fat~ Egg Free~ Sugar Free

It's been a while! I certainly did not intend to go this long without posting a new recipe, it's just a busy season of life right now.
Maybe you've seen the viral cottage cheese edible cookie dough recipes going around on social media. They contain almond flour and usually maple syrup. I made my own lightened up on plan version, and I have to say it is excellent! Don't let the cottage cheese fool you, you can not taste it.

For this recipe you will need 

24 oz. container 1% cottage cheese
3 tsp. vanilla
6 Tbsp. Brown Swerve Sweetener (or another THM approved brown sugar replacement equivalent to 6 Tbsp. brown sugar)

Blend the above ingredients in blender until completely smooth. Transfer to a mixing bowl, and add in:

1/4 cup vanilla protein powder (can use unflavored and add more sweetener)
1 and 1/2 cup (make the 1/2 cup heaping) oat flour (oats ground to a fine powder)
2 cups old fashioned oats
THM Gentle Sweet (I start with 1-2 Tbsp. and then taste, and add more according to taste)

When dough has reached your desired sweetness level, place in refrigerator. This is a food that tastes better the longer it sits in the fridge. If you try it immediately and don't like it all that much, let it sit in the fridge overnight, and you will be surprised how much better it is! I find that it has a touch of a tangy flavor from the cottage cheese right away, but that completely goes away after sitting in the fridge.

When ready to serve, add a very small sprinkle of on plan chocolate chips to your portion (don't go overboard if you want to stay in E territory). This is also great without the chocolate chips!

I usually get about 6 servings out of this. The numbers per serving for 6 servings are as follows:

Fat  4 g
Carbs  29 g
Protein  22g

If you are having this for a small dessert after an E meal, you could just have a couple spoonfuls, and your fat and carbs would be very low, and in the FP zone.

  1. I think you must be an E food wizard! I looked at the ingredients for this and was pretty skeptical. But I've enjoyed so many of your recipes I decided to give it a try. Even right after mixing it, it was good. I can't wait to try it again tomorrow! Thank you for another delicious recipe!!
