Old Fashioned Applesauce Cake * THM E * Low Fat * Gluten Free

My daughter declared this the best THM food I've ever made! That's pretty high praise, but I do agree this cake is amazing! This is very sweet, so if you don't have much of a sweet tooth I would suggest leaving off the frosting (it's very good that way, too), or cutting the frosting recipe in half, and doing a light drizzle.
For this recipe you will need
1/4 cup nonfat Greek yogurt
1/2 cup Brown Swerve (this is available in grocery stores, but I've also found it's around the same price for this two pack ,or sometimes even a little cheaper, on Amazon)
1/4 cup THM Gentle Sweet
1 egg
1 cup no sugar added applesauce
1/4 cup no sugar added almond or cashew milk
1 tsp. vanilla
1 and 1/2 cups oat flour (oats ground into flour, NOT the same thing as oat fiber)
3/4 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. mineral salt
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. allspice
Preheat oven to 350 degrees. Spray a 8x8 or 9x9 baking dish with nonstick spray. Mix Wet ingredients, then mix in dry ingredients until just incorporated. Poor batter into prepared baking dish, and let sit for 5-10 minutes before putting in the oven and baking for 40 minutes or until toothpick comes out mostly clean (a few small crumbs are fine).
Enjoy as is, or with some Fat Free Reddi Wip, or with the following frosting. Store in refrigerator.
If you cut this into 9 pieces, each piece will have 16 carbs per piece. Plenty of room to have two pieces if having for breakfast or a snack!
2.5 Tbsp. no sugar added almond or cashew milk
1/4 cup Brown Swerve
1/8 tsp. butter extract
1/4 tsp. vanilla
Gentle Sweet
In a saucepan, bring nut milk and Brown Swerve to a boil. Boil for 30 seconds. Take off heat and add butter extract and vanilla. Let cool for 5-10 minutes, then add Gentle Sweet (I add about 3 Tbsp). Drizzle over cake. The frosting will set up more as it cools.
This is also the same frosting I use on my Caramel Banana Muffins.
Do you know of a good substitute for the Greek yogurt that would make this recipe dairy free?
ReplyDeleteYou can try to replace the yogurt with more applesauce. That is usually a good substitute, however I haven’t tried it.
