Sweet Cinnamon Flatbread THM-S, Gluten Free

This Sweet Cinnamon Flatbread is hard to leave alone! It makes a great afternoon snack or dessert after an S meal! Best of all, though, is how easy it is to make. It reminds me of a snickerdoodle, but in bread form.

For this recipe you will need:

1/2 cup butter + 3 Tbsp. melted butter, separate
1 cup water
2/3 cup plus 1/4 cup THM Baking Blend
1 tsp. baking powder
3 Tbsp. THM Gentle Sweet (or equivalent sweetener), plus 1/4 cup Gentle Sweet, separate
3 eggs
1 Tbsp. cinnamon

Preheat oven to 400 degrees. Bring 1/2 cup butter and water to a boil in a saucepan, then take off heat. Add 3 Tbsp. Gentle Sweet, both amounts of Baking Blend, and baking powder. Stir until well combined, and not lumpy. Let cool a few minutes. Transfer to mixing bowl. Add eggs and beat on medium high speed for 5 minutes. Spread out on a greased or parchment paper lined 10 x 15 pan. Pour the 3 Tbsp. melted butter over top. Mix cinnamon and 1/4 cup Gentle Sweet together and sprinkle over all. Bake at 400 degrees for 25-30 minutes. This is delicious by itself and extra tasty with some Fat Free Reddi Wip or on plan ice cream! Store in refrigerator once cooled. Optional- heat up leftovers in microwave or air fryer before serving.
