Pound Cake * THM-FP * Gluten Free

I am so excited for you to try this pound cake! The first time I made it I was hoping it would be good, but was surprised at just how GOOD it is for an FP (fuel pull, which is both low fat and low carb)! I kept adding up the numbers over and over to make sure it really is an FP, thinking maybe I missed something; but it really is! My birthday is coming up next month, and after trying this one time, I decided this is what I want for my birthday dessert. It makes an amazing strawberry shortcake!

For this recipe you will need:

3/4 cup THM Baking Blend

2 Tbsp. Oat Fiber, not Oat Flour (I use THM brand. There is a big difference between brands when it comes to oat fiber, and I prefer the THM brand.)

1 egg plus 2/3 cup egg whites

7 Tbsp. low fat cottage cheese

4 Tbsp. no sugar added applesauce

2 tsp. vanilla

1/4 tsp. butter flavoring

1/4 tsp. almond flavoring

1 tsp. cream cheese flavoring (This is what I use, I get it much cheaper at our local Menards. I see there are other more reasonably priced brands on Amazon, but I don't know how they taste.)

1 Tbsp. (not tsp.) Baking Powder

1/4 tsp. mineral salt

4 Tbsp. THM Gentle Sweet (or equivalent sweetener)

Preheat oven to 350 degrees. Beat applesauce and Gentle Sweet together, then add the egg and egg whites. Beat well. Next, add all of the extracts/ flavorings and cottage cheese. Then add all of the dry ingredients until well combined.

Pour into either a silicone bread pan or a well greased bread pan. (This is the silicone bread pan I have. I ordered it after so many people recommended it in the THM Facebook groups. I love how easy bread pops right out without even having to spray the pan.)

Bake at 350 degrees for 30-40 minutes, until golden brown on top. Mine bakes for around 35 minutes. Test with a toothpick to make sure it is done. The toothpick will have moisture on it, but shouldn't have big crumbs or batter. Let cool for 5-10 minutes before taking out of pan. Once completely cooled, slice and lay each piece out on paper towels to absorb some of the moisture. Store in the refrigerator with paper towels between each slice. 

Serving suggestion- top with strawberries and Fat Free Reddi Wip for an amazing Strawberry Shortcake!

*I got 10 servings out of one loaf. My loaf pan measures 8.5 x 4.5. 

**Each slice has only 1.8 grams of fat, and 45 calories (I know we don't count calories, but I sometimes like to figure that out when I create a recipe.) The small amount of applesauce only adds 1.25 carbs per slice.

*** I think this would be good with an extra tsp. of vanilla if you don't have or want to get the cream cheese flavoring, but I have not tried it.
