Blueberry Donuts THM-E, Low Fat

I am so excited about these donuts! I've been enjoying them for quite a while now. They make a perfect E breakfast (I add some extra collagen to my coffee for protein) or afternoon snack! I love to make up a batch, and keep in the fridge for easy breakfasts all week long. They use my favorite E fuel, which is oat flour. Oat flour is just ground up oats. I've gotten a lot of questions about oat flour, so I thought I'd do a little Q and A to clear things up. Here are the most common questions I get.

1. Can I use oat fiber instead of oat flour? 
No, they are definitely not interchangeable. Oat flour is ground up oats, and oat fiber is the ground up hull of the oat grain. 

2. Where do I get oat flour?
You can make your own! Simply grind up old fashioned oats in your blender until it is a fine, powder consistency. You can also buy it online (I don't find it in stores in my area, but that may just be because of our rural location). I usually use this oat flour because I am a total Drive Through Sue, and because it is from gluten free oats.

3. Do I measure the oats then grind, or grind and then measure?
In all of my recipes, the measurements are for the actual oat flour after it is ground up. This doesn't make a huge difference, though, as one cup of oats is pretty equal to one cup of oat flour.

For this recipe you will need:

2 cups oat flour

1 cup (scant) of THM Gentle Sweet (or equivalent sweetener)

1 and 1/2 tsp. cinnamon

1/2 tsp. Nutmeg

1 Tbsp. (yes Tablespoon) Baking Powder

1/2 tsp. Baking Soda

2 cups frozen blueberries (I use frozen, wild blueberries)

1/2 cup egg whites

1 container (5.3 oz.) on plan blueberry Greek yogurt (I use Two Good brand)

1/2 tsp. Xanthan Gum

1/2 cup unsweetened applesauce

2 tsp. vanilla

1/4 tsp. mineral salt

Glaze (optional, but they are amazing with the glaze):

1 Tbsp. unsweetened almond or cashew milk

1 wedge original Light Laughing Cow Cheese (room temperature)

3 - 4 Tbsp. THM Gentle Sweet

1/4 tsp. vanilla extract

Directions:

Cream all wet ingredients together. Mix dry ingredients in a separate bowl, then add to wet mixture. Gently fold in blueberries. Spray donut pan well with nonstick spray. Let batter sit for a few minutes before baking in a preheated oven at 375 degrees. The baking time will depend on how big your donuts are. My donut pan makes large donuts that are the size of a regular bakery donut, but I know many donut pans are smaller. I bake them for around 20 minutes. Check to see if they are done by inserting a toothpick into the donut to see if it comes out clean.

Directions for glaze:

Once donuts are cool, blend together almond or cashew milk, Light Laughing Cow Cheese, Gentle Sweet, and vanilla. Drizzle over donuts. Store in refrigerator or freezer.

No donut pan? No worries! These can also be made into delicious Blueberry Donut Muffins!
