2 Minute Soft Serve Ice Cream THM-FP, Low Fat, Low Carb

You know when you just want something sweet? Something not too heavy after a meal, or maybe you are like me and get the munchies at night. This really hits the spot! I know we don´t count calories on THM, but I also know it´s not good to eat something heavy and calorie rich too late at night. This fuel pull (low fat and low carb) recipe is so quick, easy, and delicious! It´s amazing how creamy it is! I love that I never feel deprived on THM!

I have this cute, little ice cream maker, but a lot of times I don´t want the hassle of making ice cream in it, and waiting the 20 minutes or so for it to churn. This creamy ice cream is made in the blender, and so fast to whip up! This is the blender I have, and it works great for this. Any high powered blender should do the trick.

For this recipe you will need:

1 cup of frozen strawberries

2 Tbsp. Half and Half 

1.5 - 2 Tbsp. unsweetened almond or cashew milk

2 Tbsp. THM Gentle Sweet (or equivalent sweetener)

3/4 tsp. vanilla extract

1 Tbsp. THM plain protein powder (or your favorite protein powder). I use THM whey protein.

Blend it all up for 20-30 seconds, and enjoy!

I have made this ahead, and kept it in the freezer for a few hours, and it´s delicious that way too!

*Keep in mind that this ice cream has 3.5 grams of fat from the Half and Half. That is well within Fuel Pull limits. I often eat this as a treat (snack) by itself, but if you´re having it for dessert you will want to keep that in mind if having with an FP or E meal.
