Peanut Butter Chocolate Dessert Pizza, THM-S, Low-Carb

 

Your eyes are not deceiving you, I really did create my first S dessert! As you may know by now, E's are my favorite, and what I do best with, but I wanted something to keep me on plan this holiday season. Something decadent, something containing my favorite dessert flavors together- chocolate and peanut butter, so that I won't be tempted by all of the off plan goodies around. This definitely hits the spot, and it is so quick and easy to make! I'm excited for the possibilities with this. We sometimes make cookie cakes for birthdays in our family, and this would also make the perfect birthday cookie cake. My husband, who is not on plan, says this tastes just like a regular, bad for you dessert!

*Note- the sprinkles I used to decorate are not sugar free, I just used them this one time (I plan on freezing this, and saving to have at Christmas. 

For this recipe you will need:

1/2 cup salted butter

1/4 cup Gentle Sweet (or equivalent sweetener)

1/2 cup Brown Swerve (or on plan brown sugar substitute that measures like sugar)

1/2 cup no sugar added peanut butter

1 large egg

2/3 cup THM Baking Blend

1 tsp. Baking Soda

1/4 tsp. Xanthan Gum

1/2 cup on plan chocolate chips (I use Lily's brand)

Topping:

1/4 cup no sugar added peanut butter

1/2 cup on plan chocolate chips like Lily's

1/4 cup on plan white chocolate chips like Lily's

2 tsp. Half and Half

Directions:

Preheat oven to 335 degrees (Yes, 335. I've tried it at 350, and the edges got very overdone.) Cream together butter, Gentle Sweet, Brown Swerve, and peanut butter until light and fluffy. Beat in egg. Then mix in Baking Blend, baking soda, and Xanthan Gum. Stir in 1/2 cup chocolate chips. Either spray 12-14 inch pizza pan or line pan with parchment paper (I will say I've liked the results better with parchment paper). Let dough sit for at least 5 minutes, then using your hands, spread and press the dough onto the pizza pan, leaving about a half inch or so edge because it will spread to the edges as it bakes. This is what mine looks like before putting in the oven.
 

Bake for 15-16 minutes, but watch closely. Do not over bake! It might look just a bit undone in the middle, but will continue baking after out of the oven. If your dessert pizza is delicious, but very crumbly, you have over baked it (ask me how I know 😄).

Remove from oven and immediately sprinkle the remaining 1/2 cup chocolate chips and drop the remaining 1/4 cup of peanut butter by spoonfuls over the top.


Let rest for about 5 minutes, or until chocolate chips are soft and shiny. Smooth out the chocolate chips and peanut butter together to frost. Melt 1/4 cup white chocolate chips with the 2 tsp. Half and Half (I melt in the microwave), and drizzle over all.

Allow it to cool, and cut in to fun pizza shapes, if desired! Store in refrigerator or freeze.
