Kringla THM-E, Low fat, Gluten free, sugar free
For this recipe you will need:
1/4 cup no sugar added applesauce
1/4 cup plus 3 Tbsp. Gentle Sweet (or equivalent sweetener)
1/2 tsp. mineral salt
1/2 cup Low fat Buttermilk (a small amount is okay in baking, but not recommended as a beverage if following THM, I just couldn't imagine making Kringla without actual buttermilk, and the 1/2 cup is split between a lot of Kringla. I was able to get 25 out of a batch.)
1/2 cup non fat, no sugar added Greek yogurt
1 egg white (2 Tbsp.)
1/2 tsp. Baking Soda
1.5 - 2 tsp. Lemon Extract
1/2 tsp. Butter flavoring
3 cups oat flour (oats ground into a fine powder)
1 tsp. Baking Powder
1/4 tsp. Xanthan Gum
Directions:
Cream together the applesauce, Gentle Sweet, and salt. Add buttermilk, Greek yogurt, egg white, baking soda, lemon extract, and butter flavoring. Mix well. Add oat flour and baking powder, and mix well again. Chill dough in refrigerator (overnight is best, but if I am wanting to make sooner I just add some more oat flour until it's a consistency that can be rolled out). Shape into balls about the size of walnuts. Roll out in length, about the size of a pencil, then twist into pretzel shapes. Spray cookie sheet pan, and bake for around 9-10 minutes at 375 degrees. Makes about 25.
