"Buttermilk" Donuts THM-E, Low fat, Dairy and Gluten Free!


 My family likes to get donuts after church on Sundays. THM is a lifestyle I can see myself enjoying inevitably, and I don't want to always be left out of the Sunday donut fun! I searched for an E donut recipe online and on Pinterest, but couldn't find one, so I decided to come up with one. (THM does have an S donut recipe in one of their cookbooks.) These have a traditional donut taste! I've been making and enjoying them for quite a while now, but something I recently discovered was heating them up in the air fryer for just a couple minutes - wow, does that make them delicious! I store them in the fridge, and pop them in the air fryer while my cup of coffee is brewing. I often enjoy two large donuts and a cup of coffee (with added protein) for a quick, easy breakfast.

For this recipe you will need:

Donut pan (my donut pan makes donuts that are 3.5 inches in diameter)

1/3 cup unsweetened almond or cashew milk mixed with 1 tsp. white vinegar (if you are doubling the recipe like I often do, only double the nut milk, and keep the vinegar at 1 tsp.) This is your "buttermilk".

2 egg whites (1/4 cup)

1 Tbsp. unsweetened applesauce

1/2 tsp. vanilla

1 and 1/3 cups oat flour (ground rolled oats)

1/3 cup THM Gentle Sweet (or equivalent sweetener)

1/4 tsp. plus another 1/8 tsp. Nutmeg

1/8 tsp. Xanthan Gum

1/2 Tbsp. Baking Powder

1/2 tsp. salt

For topping:

1 Tbsp. butter, melted

1 and 3/4 tsp. granulated THM approved sweetener, such as Pyure

1/8 tsp. cinnamon

 

 Directions:

Let nut milk/vinegar mixture sit for at least 10 minutes. Mix all wet ingredients together. Then mix dry ingredients in to the wet until just mixed in. Spray pan and bake 16 minutes for large donuts, (adjust time for smaller donuts) at 375 degrees. While donuts are baking, mix the granulated sweetener and cinnamon together for the topping. Remove from pan, and brush tops of donuts with a small amount of melted butter. Dip donuts in the sweetener/ cinnamon mixture. Once cooled, store in fridge or freezer. Optional- For an incredibly tasty treat, heat up in air fryer for about 3 minutes before serving!

    1. It depends on the size of your donuts. It seems like there are so many different sized donut pans! My donuts are large (like the size of a normal bakery donut) and I consider 2 to be a serving. Glad you like them!
