Cinnamon Raisin Bagels and "Cream Cheese", Gluten Free, THM-E, Low Fat


 My daughter has recently needed to start eating gluten free. She has always liked bagels, so I thought I would buy her some gluten free bagels. I ended up paying well over $6 for a package of four gluten free bagels that she said didn't even taste that good! So I set out on my mission to make bagels that are gluten free, sugar free, taste good, cheap to make, and are on plan with THM so that I can enjoy them, too. Another requirement I had was they had to be easy to make and not contain yeast (because yeast and I don't always get along! I'm not sure if I don't get the temperature of the liquid right, or what. I would just rather not deal with yeast.) She thinks this is the best recipe I've ever came up with!

For this recipe you will need:

1 and 3/4 cup oat flour (ground up oats into a fine powder), I take the easy way out, and use Anthony's brand gluten free oat flour

1 Tbsp. baking powder

1/4 tsp. salt

1/4 tsp. Xanthan Gum

1/4 tsp. cinnamon

1 Tbsp. THM Gentle Sweet or equivalent sweetener 

1/2 tsp. vanilla

1 cup plus 1 Tbsp. No sugar, non-fat Greek yogurt (I've noticed this amount depends a little on the brand of yogurt. When I've used store brand yogurt, I've not needed the extra 1 Tbsp. and when I've used name brand yogurt it was a bit thicker and I needed that extra 1 Tbsp.)

1/4 cup raisins 

Topping:

Egg whites ( I pour a small amount in a bowl, and add as I go so I don't waste any)

1/4 tsp. Cinnamon mixed with 1.5 tsp granulated THM approved sweetener (I use Pyure)

Place the first six ingredients in a stand mixer bowl with the dough hook attachment, and mix until combined. Add remaining ingredients and mix on low speed until combined. Knead on medium speed for about 3-4 minutes. This is where the particular brand of yogurt comes in. If the dough is very sticky and not forming a ball, then add more oat flour a little at a time until a dough ball is formed. Here is what mine looks like.


(If you don't have a stand mixer you should be able to mix all of the ingredients with a wooden spoon, and then knead by hand, but I have not tried it that way.)

Sprinkle some oat flour on a small surface. Form a ball with the dough that is about the size pictured below. You will have to roll it a bit in the oat flour so it's not so sticky. You should be able to get about 5 of these sized balls (I have now started always making a double batch because they go fast at my house!).

Push your thumb through the centers to form a hole. Shape and stretch the dough to form an even ring. Place on parchment paper lined baking pan. Brush the tops with egg whites and sprinkle on cinnamon/ sugar mixture. Bake at 420 degrees for 14-16 minutes (or longer for bigger bagels). Once cooled I like to slice my bagels and store in the fridge or freezer. Also, for those adding up carbs in your E meal, each bagel contains around 26 healthy carbs.


I have also successfully made blueberry bagels by adding frozen blueberries instead of raisins, and adding a bit more oat flour since the blueberries create some extra juice.

Are you a bagels and cream cheese kind of person? This recipe tastes just like those little tubs of flavored cream cheese spreads, and it's an E, so you can have your bagels and cream cheese with no guilt!

For the "cream cheese" you will need:

 8 wedges (1 pkg.) Light Laughing Cow Cheese

3 Tbsp. all fruit jelly, no sugar (I used strawberry)

1/2 tsp. cream cheese flavoring (I see there are a few brands on Amazon. I use the Watkins brand, which I find much cheaper at our local Menards)

Beat all ingredients together and store in refrigerator. This also makes an amazing fruit dip!!

  4. *To make blueberry bagels replace raisins with 1/4 cup frozen blueberries, and add more oat flour one Tbsp. at a time until dough ball forms.

"Cream Cheese" Spread THM-E

This fabulous spread tastes just like those little tubs of flavored cream cheese! It also makes an incredible dip for fruit!
