Skillet Sweet Potato Hash THM-E, Low-fat
I eat sweet potatoes because I think they are so delicious, but it doesn't hurt that they are so healthy for you! Sweet potatoes are rich in antioxidants and vitamins, promote gut health, help brain function, and have even been found to have some anti-cancer properties. As someone who has already been diagnosed with cancer at a pretty young age, I'll take all the help I can get!
This is a pretty simple all in one meal (my kind of meal). You will need:
One large sweet potato
4 egg whites (or 1/2 cup)
1 wedge Light Laughing Cow Cheese
Tajin seasoning (or your favorite seasoning)
2 Tbsp. diced onion
Dried cilantro (optional)
Peel and dice sweet potato. Spray frying pan with non-stick spray. Saute sweet potatoes and onions until sweet potatoes are tender, stirring often (cover pan). Move sweet potatoes and onions to one side of pan, spray empty side with non-stick spray again. Add egg whites and Light Laughing Cow cheese.
Scramble egg whites and cheese wedge until eggs are done, and cheese wedge is completely melted in. Stir everything together. Sprinkle with Tajin and dried cilantro (optional). This makes a single serve unless you have an usually large sweet potato like I did in the pictures (but I still ate the whole thing)! 😄

I have this on the stovetop. I'm not usually very hungry in the morning, but I am today! I'm so enjoying trying out the recipes you post. I especially love your tips and tricks to keeping THM doable as a busy mama. Keep it coming!! :)
