Salted Caramel Cookies THM-E

 As you might know by now, E meals are my favorite! Sometimes you just need a little something sweet to round out your meal. I wanted to be able to make a batch of cookies, keep in the freezer, and take out one or two as needed. My daughter loves to make yummy, off plan cookies for the family, and I guess I was feeling left out.😃 I couldn't find any E cookie recipes, so I decided to come up with one. Will these cookies taste just like cookies made with sugar, white flour, and shortening? No. However, if you are looking for that little extra something sweet to end your E meal with, these will satisfy your sweet tooth! They have almost no fat at all, so you don't have to worry that you will make your E meal a crossover by having dessert!

You will need:

1/2 cup plain, nonfat Greek yogurt

2 egg whites (or 1/3 cup) 

1 tsp. caramel extract/ flavoring (there are a few options out there, I use THM's Natural Burst Caramel)

3/4 cup THM approved brown sugar substitute that measures like brown sugar (I use brown Swerve)

1/2 tsp. salt

1 and 1/4 cups old fashioned oats

1 and 1/4 cups oat flour

1 tsp. baking powder

1/2 tsp. baking soda

THM approved baking chips (I use Lily's). Today I made some cookies with white chocolate chips and some with salted caramel chips. 

Cream together yogurt, and brown sugar substitute. Add in egg whites and caramel flavoring. In a separate bowl, mix together the remaining dry ingredients, except the baking chips. Add dry ingredients to the wet mixture until mixed in. Use a cookie scoop to place on to a greased baking sheet (or one lined with parchment paper). Press dough down with a fork. You don't want them in the oven as balls of cookie dough or they will come out baked in that shape. Top with a few baking chips. My package had 4 grams of fat in 30 chips, so by only putting four on each cookie I kept the fat amount almost zero. Feel free to add just a few more.



Bake at 350 degrees for 11-14 minutes, or until just browned on the edges. Enjoy! This made 20 nice sized cookies for me.
