Hot Fudge Cake THM-E, Low fat

 

This is such a simple and delicious recipe! You will have a hard time believing you are eating an E dessert when you try this moist, decadent dessert. As I've mentioned before, I love baking with oat flour. To me, it tastes the most similar to "regular" flour. You don't even need to make any sort of special hot fudge sauce for this dessert. It makes its own fudgy layer as it bakes! I keep this in the fridge, and heat each piece in the microwave as I have it. Just like a lot of other THM desserts, I think this tastes even better the next day, but don't just take my word for it, go make it now. 😀

For the cake you will need:

1/2 Tbsp. butter, melted (this is really the only fat source, and 1/2 Tbsp. split between several servings is a very minuscule amount)

1 and 1/2 Tbsp. non-fat, unsweetened Greek yogurt

1 and 1/3 cups oat flour

1/4 cup plus 1/8 cup Gentle Sweet (or equivalent sweetener)

2 Tbsp. cocoa powder

1 Tbsp. baking powder

1/4 tsp. salt

1/2 cup unsweetened almond or cashew milk

1 tsp. vanilla

For the topping you will need:

1/4 cup Gentle Sweet (or equivalent sweetener)

3 Tbsp. cocoa powder

1 cup very hot water (just off the boil)

Spray a 8x8 or 9x9 baking dish with non-stick spray. Mix all cake ingredients and pour into baking dish. Mix Gentle Sweet and cocoa well and sprinkle on top of the batter. Pour the hot water over the top and bake at 350 degrees for 30-34 minutes. Serve with Fat Free Reddi Wip (optional)

Hot Fudge Cake THM-E

This moist and decadent cake will wow you with its layer of delicious fudge!

Ingredients

  • 1/4 tsp. mineral salt
  • 1/2 cup unsweetened almond or cashew milk
  • 1 tsp. vanilla
Topping
  • 1/4 cup Gentle Sweet (or equivalent sweetener)
  • 3 Tbsp. cocoa powder
  • 1 cup very hot water (just off the boil)

Instructions

  1. Spray a 8x8 or 9x9 baking dish with non-stick spray. Mix all cake ingredients and pour into baking dish. Mix the topping of Gentle Sweet and cocoa well, and sprinkle on top of the batter.   1. Can you tell me how you measure your oat flour please? Do you grind 1 1/3 cup oats and use that or fo you grind up enough oats to measure a total of 1 1/3 cups flour?

    1. Good question! I always measure it after it is ground up. I use oat flour so often, so I keep it all ground up, and store it like regular flour.

  2. You started buying pre-ground oat flour right? I'm wondering about consistency...whenever I grind it in my blender at home I just can't get it as fine as all purpose. Is the stuff in the bag that fine? Just made this one tonight - quite tasty!

    1. Yes, the pre ground oat flour is so fine- like regular flour. I can never get it ground fine enough when I do it myself.

    3. I like the 4lb. bag from the brand “Spicy World” on Amazon. I used to get Anthony’s brand, but then the price went way up. However, now the price keeps going up on the Spicy World, too. 😩
