Game Day Enchilada Dip THM-E, Low fat

I used to make a version of this with canned enchilada sauce and ground beef. We enjoyed it often! Canned enchilada sauce has some off plan ingredients, so I thought I would see if I could replicate the taste, and make it on plan. The other night I made this version for myself (so I could have a lot of leftovers!) and our old version with the canned enchilada sauce for the rest of my family. Much to my surprise, even my kids liked my new THM version better!

This is an easy meal to serve to non THM people or to make a crossover for children. My kids like it with shredded cheese and sour cream.

For this recipe you will need:

1 pound 99% lean ground turkey, or lean ground beef, rinsed well (I prefer to use ground turkey in E meals so that I don't have to rinse the meat)

2-3 Tbsp. finely diced onion

1 small can tomato paste (6 oz.)

1 can chicken broth (14.5 oz.)

1/2 tsp. oregano

3/4 tsp. cumin

3 tsp. chili powder

2 wedges Light Laughing Cow Cheese

1/4 tsp. garlic powder

salt and pepper to taste

Whisk all ingredients, except ground turkey, onions, and Light Laughing Cow Cheese in a saucepan. Heat over medium heat, stirring often, until it just begins to boil. Turn heat to low, add cheese wedges, and simmer, stirring occasionally.

While sauce is simmering, cook ground turkey and onions until fully cooked. Add cooked meat/ onions to sauce and serve with baked tortilla chips or Popcorners. 

I have just recently found Baked Tostitos in one grocery store in our area again. It has been years since they have been available here! I have tried this dip with Popcorners, which are easier to find, and it is very good! I have also had good luck making chips out of corn tortillas in the air fryer.
