Strawberry Banana Bread THM-E

 


We love the flavors of strawberries and bananas at our house. Whether it's a smoothie, yogurt, or just a bowl of strawberries and bananas, you can't go wrong with this flavor combination! This is such a moist, delicious bread that tastes like the "real thing". I like baking with oat flour because I lost 50 pounds eating more E meals than S meals. I also very steadily lost weight eating a lot of baked goods with oat flour. My weight loss would tend to stall if I ate too many sprouted wheat products, so I tend to stick with baking with oat flour. Baked goods with this flour also taste, to me, the most similar to regular baked goods.

For this recipe you will need:

*2 ripe bananas, mashed

*1/3 cup mashed strawberries (this is about 5 large strawberries)

*1/2 cup no sugar added applesauce

*1/2 cup egg whites (fresh or carton)

*1/4 cup on plan strawberry flavored greek yogurt

*1 tsp. vanilla

*1/3 cup Gentle Sweet (or equivalent sweetener)

*2 cups oat flour

*1/2 tsp. salt

*1 tsp. baking soda

*1 Tbsp. (yes Tbsp.) baking powder
 

 Dice the strawberries up first, then mash them, otherwise you'll have strawberry juice flying everywhere! 😅

I like to do it this way versus using a blender (and I don't have a food processor) because I can use a slotted spoon to measure just the mashed strawberries, and not get all of the juice.



Mix the bananas, strawberries, and the rest of the wet ingredients together. Add in the dry ingredients until combined, but do not over mix. Grease a 9x5 loaf pan, pour in batter, and let sit a few minutes before baking for 1 hour at 350.

Optional glaze: this really takes it to the next level, and is so easy to make!

*1 Tbsp. unsweetened cashew or almond milk

*1 wedge original Light Laughing Cow Cheese (room temperature)

*4 Tbsp. Gentle Sweet

*1/8 tsp. strawberry extract/ flavoring

Place all ingredients in blender (I use a small blender cup), and blend until smooth. Drizzle over cooled bread. Store bread in refrigerator. This tastes even better the next day.


Enjoy with a cup of coffee (or a Pumpkin Spice Latte this time of year) and you've got breakfast or snacks taken care of for the week!
