Easy, Cheesy Queso Blanco THM- FP
Are you missing chips and queso? I doubt you will be after trying this delicious alternative!
I love Popcorners as a healthy alternative to chips, and they can be used in THM E meals. I'm all about quick and easy THM meals, and this is about as quick and easy as it gets! Pair these "chips and queso" with something like a sprouted bread and deli meat sandwich, and some fruit, and you've got an easy E meal! Simply microwave one wedge of Light Laughing Cow cheese in a very small bowl. I heated for 20-30 seconds, but I have a low watt microwave, most microwaves won't take that long. Once cheese is melted, add 1/2 tsp. of either unsweetened almond or cashew milk, and about 2 Tbsp. of fresh Pico de Gallo. I buy my Pico in the produce section of the grocery store. That's it! Enjoy!
